  • Main Ingredient

  • 1 cup dates, halved
  • 60g Flora Buttery Spread
  • 1 cup brown sugar, firmly packed
  • 1 cup water
  • 1/2 teaspoon bicarbonate of soda
  • 1 egg, lightly beaten
  • 1/2 cup walnuts, roughly chopped
  • 2 cups self-raising flour

Step1: Combine dates, Flora Buttery spread, brown sugar and water in a small saucepan. Stir over a medium heat until sugar is dissolved. Bring to the boil; remove from the heat and allow to cool.

Step 2: Add bicarbonate of soda, egg and nuts to date mixture and mix well.

Step 3: Stir in flour and mix gently. Pour into 2 well-greased date roll tins, filling just over half way. Bake in a moderate oven for 40-50 minutes, or until a skewer comes out clean. Cool in the tins for 10 minutes, then gently remove and cool on racks. Serve sliced and spread with Flora Buttery spread.

Hint: If you don't have date roll tins use a 13 x 23cm loaf tin
